What would I do if I wanted to synchronise to eBay for the first instance (and associate the listings with inventory products), but not have any old orders affect the inventory count?

You need to block each old order to avoid they affect inventory

A quick way to do this, is to filter shipped orders (that is orders marked as shipped on eBay)

Then click PROCESSING and select to block all selected orders
